Immature Verjus grapes are carefully picked in August when their acidity approaches a Ph of 2.7 to 2.8. This is the sweet (yet not sweet!) spot for use as a fresh, local alternative to lemon and lime.
Verjus is a tart, acidic juice made from unripe grapes. It’s often used in cooking and salad dressings as a tangy alternative to vinegar or lemon juice.
The flavour is milder than that of mature wine grapes, adding a subtle acidity to dishes without overwhelming them. However, this Verjus was created specifically for cocktail and beverage use and it will surely enhance the flavours in your next recipe!
